Goat Tortilla Soup

 

Who doesn't love a great Tortilla Soup recipe? We love this simple twist with ground goat. Prep it in the morning and let it simmer until you get home after work or throw it together at the end of a long day. Whether using fresh ingredients or cans out of your pantry, this is an easy meal to feed a small family or double or triple up to feed the whole clan. We like to add a little sour cream, grated cheddar cheese, and tortilla chips to this soup. Spice it up with a few JalapeƱos or Chiles if you like your Tortilla Soup a bit hotter!

 Ingredients

 16-oz ground goat meat
 2 15-oz. cans black beans
 3 10-oz cans Rotel tomatoes
 1 cup salsa (mild, medium, or hot)
 1 4-oz. can chopped green chiles
 1 14.5-oz. tomatoe sauce
 1 cup grated cheddar cheese
 1 bag tortilla chips

 Garnish with sour cream, tortilla chips
 and grated chedder cheese.
 Cooking Instructions

 1. In a pan, brown ground goat, over low heat using
 olive oil spray, until meat is cooked through.
 2. Combine all ingredients in a crockpot, except
 chedder cheese and tortilla chips. Set to low and
 simmer for 4 hours or until warmed through.





 Yield: 6-8 servings
